Special guest at the 14th edition of Granaccia & Reds of Liguria staged this Sunday in Quiliano will be the renowned Piedmontese distillery dei fratelli Marolo, located in Alba, the capital of the Langhe.

Immersed in this extraordinary territory, which became a UNESCO World Heritage Site in 2014, the Marolo brothers founded the distillery in 1977, thus starting an adventure that will soon involve the whole family.

So he tells Paul Marolo who, inspired by the figure of Saint Teresa, a supporter of the Catholic counter-reform, names his own distillery "Santa Teresa": he too intends to be an active architect of the counter-reformation of the distillation of marc.

In fact, from the beginning of his activity, he threw himself against the custom of the time, which still saw grappa as a product of quantities obtained through continuous steam stills. Paolo chooses instead a distillation of quality, opting for the bain-marie, a method that allows to transform pomace of noble vines  in distillates that enhance its characteristics, while remaining faithful to Nature and its rhythms.

In fact, according to the production technique chosen by the Marolo family, it is necessary to follow the distillation process in every phase, because the production plant is not automated: dexterity it changes according to the quality and nature of the marc used.

The Marolo distillery is today the undisputed acknowledged testimony of how it is possible to combine artisanal and traditional techniques with modern equipment, high quality with a marketing that looks to the future for efficiency and dynamism.

We can't wait to be able to taste the fruits of the skilful work of this Piedmontese family therefore, which among its flagship products also sees the distillates of fine Ligurian wines such as Grappa of Pigato , Grappa of Vermentino.
