GRANACCIA SAVONESE HILLS IGT
- Grapevine: Granaccia 100% (Alicante)
- Area of production: about one and a half hectares of vineyards cultivated in the hills on the ridipes on the slopes overlooking the ancient village of Quiliano (SV). The mixed red and clayey soil gives the wine complexity
- Exposure: south
- Breeding: Guyot. The vines are carefully thinned out at the time of vinification
- harvest: between the second and third decade of September in small boxes
- winemaking: in traditional red with de-stemming of the grapes and fermentation at a controlled temperature (26 ° C). The maceration with the skins is about 10 days and 2/3 pumping over a day is carried out to favor the extraction of color.
- Maturation: remains about 12 months in steel tanks
- Finishing: it is bottled in the autumn following the harvest and rests in the bottle for four to six months before being placed on the market
- gradation: 13.50% vol.
- Taste characteristicse: the color is a brilliant ruby tending towards garnet, the intense, fine, spicy aroma also suggests balsamic and resinous notes and a sweet hint of cherry and raspberry jam. In the mouth it is warm, soft, persistent, only slightly tannic in the finish. Excellent to accompany roast meat from the courtyard, it is ideal with baked fish and the typical burrida (stewed fish) of the coast
