Ligurian evening at the Regional Enoteca of Ortovero.
On March 31, 2022 at 20.00 pm we will meet for a special dinner, directed by Chef Francesco Santinato, Chef de "La Locanda del Cavaliere" in San Bartolomeo al Mare.
HERE'S THE MENU
Ligurian aperitif
the focaccia stuffed with cheese, the herbs in batter and the green tart with extra virgin olive oil.
Antipasto
Low temperature asparagus and eggs, Parmesan sauce.
First plate
Vialone Nano risotto "alla Sardenaira" with Centa caviar and dehydrated tomatoes
Second dish
Stuffed veal tomaxelle, an ancient recipe from Liguria on the vegetable ratatuia of the Locanda del Cavaliere.
Desserts
Pietrabruna stroscia with hazelnuts and Langhe robiola mousse.
All dishes will be accompanied by a selection of wines from the companies of Vite in Riviera, designed by our Sommelier Gianni Boffredo and the Chef.

Chef Francesco Santinato has worked for some national excellence companies including the 5-star Luxury Villa d'Este in Cernobbio - Lake Como and the La Prua Restaurant in Alassio. Locally he was the Chef of a company in the network of Vite in Riviera or the Torre Pernice farmhouse, where he refined his knowledge of the territory and its typical products. At the moment he is the Chef and Sommelier of the Locanda del Cavaliere in San Bartolomeo al Mare, a newly opened restaurant in a 1600th century farmhouse where he offers traditional cuisine reinterpreted thanks to his experience, in a contemporary key.
